One of Nate's and my favorite dishes from China is clay pot rice. Absolutely wonderful. One of those dishes I could eat daily...and almost did (there is not too much variety where we lived -- it was either stir-fry, claypot rice, hot pot, noodles, or steamed dumplings). Clay pot rice is the one dish I've really missed. So, for my birthday, Nate ordered me two clay pot dishes :) I finally tried them out this week. I was really nervous because I had no idea how to do it, but it ended up being really easy. We didn't have all the Asia flavors (sesame oil, ginger, malt vinegar, etc...), but it turned out good with what we had. It even had the burnt rice crispies at the bottom which is Nate's favorite! However, I'm still trying to get the pots clean of the burnt pieces...

Our hot pads after setting the clay pots on them for just a few minutes. Someone mailed those to us in China -- good thing we aren't still there, or Nate would have had a fit (anything Texas was precious to us there :)!
Can't wait to try them out again!
I can't imagine how devastating it would have been for those to have been ruined in China. I know how precious Texan things were to us while we were away--and we were still in the country! ;) (we got excited seeing "Texas Toast" at the grocery store, lol)
